Frittatas....Love You


The Frittata. A much neglected, but very valuable cousin of the omelette, with one important difference...frittatas are more forgiving when you ask too much of them. LOL, PLUS you can have them for dinner!

Be sure to try at least one of these vegetarian recipes out, using whatever veggies you prefer, and enjoy with a tasty salad of your choosing! As an added plus, they're both grain-free, red meat-free, flour-free, and paleo-approved.

#1. Mushroom Frittata

Total Time: 25 minutes Prep: 15 minutes Serves 4

Ingredients:

2 Tbsp extra-virgin olive oil

10 ounces mushrooms, chopped

2 tsp thyme leaves, fresh if possible

2 scallions, chopped thinly

8 large eggs

Kosher salt and pepper, to taste

3 ounces goat cheese (omit for paleo)

-Preheat oven to 425 F, then add oil to 9 or 10" cast iron skillet on medium heat.

-Cook mushrooms 5 or 6 minutes, until golden, then add scallions and thyme. Cook for 1 more minute, stirring frequently.

-In large bowl, whisk together eggs and 1/2 teaspoon of salt and pepper, respectively. Pour into pan and gently stir for 1 minute, then allow to cook (and set) for 1 more minute.

-Top with goat cheese, then transfer to oven and cook for an additional 8 to 10 minutes. Enjoy with salad.

#2: Mini Herb Frittatas

Total Time: 45 minutes Prep: 15 minutes Makes 12 frittatas

Ingredients:

10 large eggs

1/2 cup crème fraîche, or sour cream

Kosher salt and fresh ground black pepper

1/2 cup fresh parsley, chopped

1/4 cup fresh dill, chopped

3 Tbsp fresh chives, chopped

4 ounces Cheddar cheese, course grated (omit for paleo)

-Preheat oven to 375 F, and cut 4 1/2" parchment squares to line 12 muffin tin holes.

-Set aside 1/2 cup of the Cheddar cheese.

-Then, whisk together the eggs, cream, and 1/2 of a teaspoon of salt and pepper, respectively. When combined, fold in the parsley, dill, chives, and remaining Cheddar cheese.

-Fill the lined tin, and sprinkle the 1/2 cup of cheese on top, then bake for 23 to 25 minutes. The frittattas should be puffed and just set. If you want them golden, place in broiler for 1 to 2 minutes.

-Serve alone, with bammy, or refrigerate immediately. Enjoy within 2 days.
