Creative and Tasty Way to Use Yucca

Looking for an easy recipe that incorporates your love of bammy, plus lack of time to cook? Look no further and get cooking!
Yields 8 servings
Total Cook time: 1 hour and 10 minutes
Prep: 15 minutes
Cook: 30 minutes
You will need:
2 Tablespoons unsalted butter
1 habanero pepper, seeded and minced
1 cup yucca flour (aka tapioca or cassava flour)
Pinch of kosher salt
1 teaspoon baking powder
1 cup Parmesan, grated
1 egg, beaten lightly
2 Tablespoons milk
Additional Tropical butter ingredients:
1 stick unsalted butter, at room temperature
1/2 cup drained pineapple, crushed
1 Tablespoon honey
Pinch of kosher salt
1. Preheat oven to 375 degrees F.
2. Melt 2 tablespoons of butter in a small pan, on medium heat, then sauté the habaneros for about 4 minutes, until tender. Set aside.
3. Combine flour, salt, baking powder, and Parmesan cheese. Then milk egg, milk, and cooked habaneros in separate bowl.
4. Combine wet and dry ingredients, by hand, then knead a few times after it comes together.
5. Roll dough into 8 golf-ball size balls and place on parchment-lined baking sheet. Then bake for 25 minutes, until golden.
6. To make tropical butter, blend all ingredients, until combined. Then refrigerate until ready to use.
To serve, serve buns warm, with Tropical Butter. ENJOY your tasty, grain-free, vegetarian snack! To make it vegan, just substitute a vegan butter. :)
