Vegan Desserts are Easier Than You Think


Just in time for Valentine's Day, we're bringing you the tastiest vegan desserts we could find. Are you ready? :D

 

First, we have vegan meringue. Remember the chickpea goop that you usually pour down the drain? It makes delicious, home-made meringue, with a delicious malty flavor.

SIDE NOTE: Avoid making this on humid days, since it makes the meringue extra sticky. :)

First, you will need one 15-ounce can of chickpeas, 1/4 tsp cream of tartar, kosher salt, and 3/4 cup superfine sugar.

Next, preheat your oven to 250 degrees F and lay parchment down on two baking trays. Meanwhile, strain about 3/4 cup chickpea liquid into the stand mixer bowl, add cream of tartar and pinch of salt, then mix until quite foamy, on medium-high speed.

While still mixing, add sugar by the tablespoon, and continue mixing about 4 minutes, until stiff, glossy peaks form. Then transfer to large pastry bag and pipe using a round or star tip, making 2" mounds, 2" apart on the sheets. If you like, you can fold chocolate chips or your favorite extract before piping.

Bake for about 2 hours, rotating sheets after 1 hour, until set and not glossy. Then, turn off oven and leave for another hour, for the inside to fully dry. Store in airtight container for up to 3 days.
