Rich Desserts You Won't Realize Are Vegan


Next up, those decadent desserts that you thought you could never have again...like chocolate anything. ;)

 
 

First, we'll tackle a completely raw and Vegan Berry Chocolate Mousse, for 2 You will need: 2 ripe medium avocados, 2 ripe bananas, 6 Tbsp coconut oil, 8 Tbsp raw cacao powder, 2 Tbsp maple syrup (to taste), 200 mL (approx 7 ounces) coconut milk, and salt.

1. Pit avocados by cutting in half, then portion the flesh into a food processor or blender, with all other ingredients.

2. Blend until smooth and thick, stopping to scrape the sides, and adding more coconut milk if it isn't creamy enough. Then pour into four ramekins or small bowls, freeze for 30 minutes, then transfer to the fridge.

3. Once set, top with berries of choice and enjoy!

 
 

Next, prepare your taste buds for a decadent No-Cook Chocolate Cheesecake, for 4, while you gather: 2 cups unsalted, unroasted cashews, 1/2 cup cocoa powder, 1/2 cup maple syrup, 1/4 cup coconut oil, 1 tsp pure vanilla extract, 2 Tbsp lemon juice, 1/8 tsp sea salt, and 3/4 cup water.

To start, you will slowly blend all ingredients together in a blender, until very very smooth, like fudge, with no cashew chunks. If the blade gets stuck, stop the blender, create an air pocket down the side, then start blending again, on low speed.

SIDE NOTE: If your blender is not very strong, soak the cashews in warm water, for 1-2 hours, before blending. Just be sure to rinse clean before and blend immediately afterwards.

Once done, pour into desired silicone or regular pans. If you don't have shaped pans, you can easily cut the mixture into shapes after it has chilled for at least 8 hours. The key is to spread out the mixture to 1" or less deep, using the back of a spatula, before freezing.

Finally, keep frozen at all times, and when enjoyed, eat immediately.
