Simple Vegan Ice Creams


I promised, so I will deliver. Below are three TASTY, VEGAN ice cream recipes for your taste buds to savor this Valentin'es Day!

Starting it off right, with the original, Vanilla.

Serves 1

You will need:

-1/4 tsp vanilla extract

-1 Tbsp sugar

-1 Tbsp espresso beans

-1/2 cup coconut milk

-1 Tbsp coconut butter

-1/2 tsp salt.

Pretty simple instructions after that. Mix. Freeze. Enjoy!

 

Next, we tackle dairy-free, Banana Ice Cream, for that amazing person in your life.

Gather:

-2 fresh bananas

-Cinnamon

-1 to 2 tsp maple syrup

Slice the bananas, freeze for 1 to 1 1/2 hours, then blend, garnish, drizzle, and enjoy! In that exact order. ;)

 

Last, but in no way least, you can create your own sugar-free Mint Chocolate Chip Ice Cream. Minty, refreshing, nutty, and sweetened naturally. Curious now? Read on....

Ice Cream Ingredients:

2 ripe avocados, peeled and pitted

1 can (14oz) full-fat coconut milk

1 cup cashews

1 Tbsp coconut oil

10 dates

1/4 cup cacao nibs

3/4 cup fresh mint leaves

1 tsp pure vanilla extract

1/4 tsp sea salt

1 Tbsp liquid chlorophyl (optional, for color)

Chocolate Sauce Ingredients:

1/3 cup dark chocolate chips

1 tsp coconut oil

To get this party started, either freeze the coconut milk for 2 hours OR refrigerate overnight. Then, soak the cashews (2 hours) and dates (15 minutes) in warm water, then drain. After doing both of these steps, you're ready to start your ice cream.

Open the coconut milk can and remove the hard coconut cream into the blender, setting aside the liquid for later recipes. Next, combine all other ingredients, EXCEPT cacao nibs, with blender for 3-5 minutes, stopping often to scrape the sides and mix.

Using a silicone spatula, spoon the mixture into a parchment-lined loaf pan, and mix cacao nibs well into the ice cream base. Then cover with plastic wrap and freeze for 4 hours, while preparing your chocolate sauce.

SAUCE: Melt chips in double broiler, then gradually add coconut oil, until silky. Drizzle over ice cream when done, aaaaaand.....you guessed it.....Bon Apétit!
